The main fermentation takes place in open vats, then the wheat yeast matures in original bottle fermentation with lots of fresh yeast. The dark Gutmann Hefeweizen shows spicy and banana notes in the fragrance, which are carried by a fine malt flower. When drunk, the roasted aromas provide a subtle caramel chocolate note which, coupled with the typical yeasty aromas, offers a special drinking experience.
