It is one of the oldest monastery breweries in Germany, and numerous publications even list it as the oldest brewery in Franconia: the Klosterbrauerei Weißenohe. A traditional monastery brewery, founded at the end of the 11th century by the monks of the Benedictine monastery and acquired by the Winkler family in 1827 after many turbulent years. Since then, fresh beer specialities have been brewed in the brewery - with love for the craft of brewing and, of course, strictly according to the Purity Law of 1526. Behind the former monastery walls, brewmaster Urban Winkler is currently at the brew kettle. Together with his wife, he runs the family business, which currently employs 13 people.
Weißenoher Klostersud, Altfränkisches Klosterbier, Glocken Hell, Bonifatius Dunkel
Water, hops and malt – that's all a beer needs. At least that's what the Bavarian Purity Law of 1516 says, even though a fourth ingredient, yeast, is now permitted. The monastery brewery is committed to the centuries-old brewing tradition. Only the finest and highest quality ingredients go into the beer: their own spring water from the hillside springs (the former monastery springs), hops from regional hop growers, barley from Fränk production, very gently roasted malt from their own production and traditionally fermented yeast. All of these ingredients are used in the Klosterbrauerei, which since 2001 has been brewing übrigens also strictly according to the guidelines of the „Bioland“ fränkische Ökobierspezialitäten, to create the finest fränkische beers, which you should definitely have tried. Elegant, subtly spicy in taste and with an individual and sometimes very modern touch (for example in the craft beer specialities). Despite all the modernity that characterises the family business today and makes it fit for the future, the good old monastery tradition and thus the tradition of the house has not been lost at Winkler's. Klostersud, Altfränkisches Klosterbier, Bonifatius Dunkel, Eucharius Pils, for example, are the names on the labels of the beer bottles. And when the church tower in Weiß is silent in the evening, at the latest, it's the end of the day at the monastery brewery, and time for a Weiß Glocken Hell.
Tavern Klosterbrauerei Weißenohe
The tavern of the Klosterbrauerei Weißenohe is located in the brewery courtyard directly in front of the church. In 2000, the listed rooms of the former monastery were converted into a beautiful inn. Here, lovers of fresh cuisine get everything their heart desires: hearty snacks, wonderfully tasty fresh dishes prepared with ingredients from the region and, of course, the wonderful draught beers from the monastery brewery, freshly tapped and well-conditioned.
By the way: For hikers of the 5-Seidla-Steig - probably the best-known beer tour through the Fränkische Schweiz – the inn is an absolute must!
