The brewing tradition of the Stelzer Castle Brewery in Fattigau in the district of Hof/Saale in Upper Franconia dates back to the Middle Ages, to 1353 to be precise. In 1900, the Stelzer family stood at the brew kettle where robber barons brewed for princely dynasties and lords of the manor. Since then, the small private brewery has been producing the finest beer specialties - strictly according to Bioland guidelines since 1994. At that time, the family business was the first brewery in Upper Franconia to be certified according to the specifications of Bioland e.V. - the association for organic-biological agriculture.

And with Bioland raw materials from controlled organic farming. In plain language, this means that only selected raw materials that meet the specifications are used in the beer:
The best water from our own 95m deep well, which has a particularly low nitrate load of 1mg per liter and is especially soft.

individually roasted malts from regional malting plants in Harsdorf, Bamberg or Kulmbach

Individually bred yeasts with yeast strains that are particularly suitable for classic cold fermentation.
Which brings us to the next topic - the brewing process. Master brewer Christian Stelzer brews according to traditional recipes. With cold fermentation at a maximum of 10 degrees Celsius, gentle filtration and no flash pasteurization. Although this only gives the beers a shelf life of about 5 months, it does give them an individual taste. The long cold storage period also contributes to this. The young beer matures in the storage cellar for at least six weeks at temperatures down to a maximum of 0 degrees Celsius, and the bock beer for as long as ten to twelve weeks. Quality that you can taste at the end and that you should have tried in any case For example, the organic beer variety "Bio Perle" or the "Bio Perle light" with reduced alcohol content. Stelzer Brewery Cellar
As usual in Franconia, a genuine Franconian brewery also includes a genuine Franconian country inn. This is also the case at the Stelzer Castle Brewery. Unfortunately, we can report little or almost nothing at this point about the brewery cellar including beer garden, guesthouse and knight's cellar, where, according to good old robber baron tradition, people celebrated and dined with relish until recently. One looks for a new tenant - we catch up the "reporting" at given time.
